La Maison Arabe Introduces Morocco’s First Raw Food Menu at Les Trois Saveurs Restaurant

Marrakech Landmark Property Teams with Elyane Lèbre to Redefine Moroccan Dining Scene.

MARRAKECH, MOROCCO – La Maison Arabe, a boutique luxury property in the Medina of Marrakech, today introduced Morocco’s first organic raw food menu at restaurant Les Trois Saveurs.  Designed specifically for the hotel by French dietary cuisine specialist Elyane Lèbre, the menu is carefully crafted to highlight the benefits of raw food and emphasizes pure, nutritious flavors.  The raw food menu is the first of its kind in Morocco, and bolsters La Maison Arabe’s reputation as a trendsetter in the Marrakech tourism space.  Owner Fabrizio Ruspoli was the first to transform a riad into a boutique hotel, and the property was the first in Morocco to offer on-site cooking classes. 

Raw foods, which contain more vitamins, minerals and enzymes than cooked foods, help rid the body of impurities and boost the immune system.  The raw menu at La Maison Arabe features appetizer items such as olive tapenade ravioli with figs, main dishes like wild salmon and fennel chirashi and desserts such as mini chocolate sushi with citrus slices and honey ganache.

A recognized member of the French Anti-Age Association, Ms. Lèbre has become one of the foremost specialists in anti-age nutrition and raw food.  She previously worked as a journalist with some of France’s most prestigious media outlets, including Vogue, Elle and TF1.

Les Trois Saveurs at La Maison Arabe features custom-designed Moroccan craftsmanship throughout the restaurant.  Inside, walls covered in striped grey tadelakt and Italianate red ceilings create an intimate atmosphere.  The regular menu is prepared by French chef Didier Levy, and features French, Moroccan and Asian-inspired dishes.
